We teach pannekoeken classes at our store in Rigby, Idaho. Pannekoeken rise up dramatically in the oven forming bowls extending five inches or so above the rim of the pan. We love the “oohs” and “ahs” as the first pannekoeken comes from the oven.
I told the little boy that it was magic but if he would come up, I would tell him what the magic word was. I whispered it in his ear.

How to Make Pannekoeken
Pannekoeken are easy—as easy as pancakes. There is less prep time than with pancakes—mix the batter and stick it in the oven. Bake time is only 12 to 15 minutes. If you are going to load it with fruit or vegetables and meat, you can prep the ingredients while the pannekoeken is in the oven. You can serve most pannekoeken in about 20 minutes.
You can make them from scratch or make it easy with a mix. A mix will save you time but a basic pannekoeken recipe only calls for five ingredients. While a commercial mix will have a few extra embellishments like buttermilk and flavors, the recipe in this article will make a fine pannekoeken.
While it’s handy to make them in a pannekoeken pan, you can make them in a rounded skillet if it has gently rounded sides and if it has a very good nonstick surface. If you are using a rounded pan and it doesn’t rise the way it should, either the surface isn’t slick enough or the oven isn’t hot enough.
Pannekoeken for Breakfast, Lunch and Dinner
When we lived in Minnesota, we found a chain of restaurants that served pannekoeken for breakfast, lunch and dinner. It’s amazing what they could do with a pannekoeken. Look at these offerings from the Pannekoeken Huis Restaurant in Maplewood, Minnesota.

We have customers that make pannekoeken nearly every day—for breakfast, lunch or dinner. Maybe for breakfast, they’ll simply serve them with syrup like pancakes or German pancakes. We love to add fruit—maybe bananas, cream syrup, and a little whipped cream. Strawberries, peaches, and mangos are terrific.
You can also make pannekoeken along the lines of breakfast burritos. Scramble some eggs, brown some sausage, and sautéed some peppers and onions. Load up your pannekoeken and drizzle it with cheese sauce.
One of our favorite pannekoeken for lunch is a fresh veggie pannekoeken drizzled with white sauce or cheese sauce. Steam up some of those garden vegetables and stack them in your pannekoeken when it comes from the oven. Drizzle it with sauce and cut it into wedges for rving. You can also make taco pannekoeken—or let your imagination lead you. One year after Thanksgiving, we made turkey ala king pannekoeken.

What follows is a banana cream pannekoeken recipe but you can use the same recipe and substitute peaches, mangos, or strawberries. Banana Cream Pannekoeken Recipe
1/4 cup butter
3 large eggs
1/8 teaspoon salt
3/4 cup milk
3/4 cup all-purpose flour
2 or 3 medium bananas, peeled and sliced
coconut, vanilla, or cinnamon cream syrup
Preheat your oven to 425 degrees.
1. Place the butter (one-half cube) in a pannekoeken pan or an eleven-inch ovenproof skillet with rounded sides.
2. Place the pan with the butter in the oven to heat and melt the butter. Remove the pan when the butter is melted but not scorched.
3. Whisk the eggs, salt, milk, and flour in a medium bowl until it is nearly smooth.
4. Once the pan is hot and the butter melted, remove the pan from the oven. Pour the batter into the hot pan and put it back in the oven to bake.
5. The pannekoeken will rise in the oven. Bake for 11 to 15 minutes, until the top edges are a light golden brown.
6. Remove the pan from the oven and slip the pannekoeken from the pan onto a large cutting board. You should be able to do this tilting the pan, grabbing the leading edge of the pannekoeken with your thumb and forefinger, and pulling gently. It should slip right from the pan.
7. Spread sliced bananas in the pannekoeken, drizzle with syrup, and top with whipped cream. Cut into slices and serve immediately.
You can omit the fruit and serve your pannekoeken with only syrup. Don’t worry about putting butter on it as you would pancakes; there will be plenty of melted butter on the pannekoeken from the baking.
